Southern Comfort
Done right, biscuits satisfy customers' hunger for more than a bite to eat.

Biscuitvillc restaurant operator Chuck Alston
is lovingly constructing one of the chain’s
“Ultimate Bacon” biscuits. 1 Ic gently presses one
blade of a pair of tongs against the sale of a fresh biscuit.
I which almost magically separates into two halves,
releasing wisps of fragrant steam. Alston lays two crisp,
perfectly browned strips of bacon in an "X" atop the
lower half, followed by one slice of cheese on both the
top anil bottom.
Next come two more dices of bacon, followed by

glistening hard-cooked egg, sauteed within a circular
form, perfectly round with the yolk intact. WTien the
top is added, the creation stands four inches high, w ith
eight («aeon strip ends spilling from all sides, like the
tendrils of a lush plant.

I can’t resist ordering a pork chop-cgg-and -cheese
biscuit; several customers suggested this is one of
Biscuitvillc's best.
I find the biscuit itself beautifully browned and
crisp on both the top and bottom.

well-seasoned
tameless pork chop in the center has a crispy, granular
coating. When I bite into the biscuit, the meat has a
satisfying texture and resistance to the teeth. The silky
egg anil melting cheese smooth out and tie together
the different tastes and textures of this most Southern
of sandwiches.
Mouthwatering a must
“A biscuit has to lie golden brown, fluffy, and flaky when
you <>|K*n it and mouthwatering when you bite into
it,” says Alston, who should know. The manager of the
Biscuitvillc restaurant on Greensboro’s West Wcndover
Avenue is a past winner of the highly competitive biscuit
take-off among the company’s restaurant managers.
Just the existence of such a competition indicates
the sharp eye that operators keep on the consistency
of the biscuits, baked fresh every 20 minutes at the
5 1 Biscuitvillcs in North Carolina and Virginia.
