sometimes fast and sometimes slow the churn is shifted from one person to another until the butter comes but it is not generally known that an irregularity of motion always more or less impedes the pro cess insomuch ihat it often becomes te dious and the churning continues two hours instead of one those who wish to have their butter good and to come quick " should by no means says mr cutbush suffer any person to assist them in churning unless i mu absolute necessity for if thi i burn ing be irregularly performed the but ter will in winter go back ; anil if the agitation be moreqick and viohnt in summer it will cause the butter to fer ment and thus to acquire a very disa greeable flavor these remarks of mr cutbush agree verv well with mv own observations buiter seldom keeps fresh in the summer more than two or three days wnen there are two or more persons engaged in the churn ing cream should on no account be churned in the middle of a summer's day but only early in the morning or late in tbc evening regularity of motion should be particularly attended to ;
